take one lemon ...

A good lemon will feel heavy for its size and have a finely textured skin. As it ripens, the skin becomes thinner and more juice will develop. At one time lemons were so expensive only nobility could enjoy them!



So I took my lemon and made this, a basic 7oz Victoria sponge mix, and in the mix added the zest and a little of the juice. I was taught at school to take however many eggs you are going to use and weigh them, then use equal quantities of all other ingredients, and this method does work. Baked in a 2lb loaf tin, using one of the marvellous Lakeland loaf tin liners. Once cool, I used the remaining juice with icing sugar to make a drizzle.



I waited until J got home from work before I cut into it, promise! He enjoyed his, as you can see, although he did suggest, however much he likes my cakes, that I don't get back in the habit of baking. His plan for today is to get back on the celery!

Hi Louise, that looks really yummty, I didn't know about the weighing the eggs method, that sounds really simple. Maybe I'll surprise Mr. Bloom one of these days and bake him a cake.

That's really strange as I have just been on the market today to buy 3 lemons to make a Lemon Cake!

Looks yummy! I've been on a baking jag lately as well. My beloved did just as yours did. That is, gobbled it down, and then begged me to stop!

I have the opposite. Greg loves it when I bake... (and he never gains an ounce) ....and now that I have begun to bake my own breads.... is especially happy. He can hardly wait to get through the door some days for his fresh bread and honey with a lovely slurp of tea. He seems to smell the aroma from about a block away......

i love lemon cake.
i recently made it for the first time using a great recipe posted of the homely year's blog. I have used the weighing method for Victoria sponge as advised by Hugh FW in the book 'The Family Cookbook'.It makes perfect sense as eggs vary so much in size. We are in to baking at the moment and R made chocolate brownies yesterday.(yes i have to fight him for the kitchen these days).
