anzac biscuits ...

Unlike the lemon cake, I didn't make these, and we did infact devour the whole packet a week or so back. I often buy Anzac biscuits, they are one of my favourite biscuits for dunking (bad habit I know), and more importantly a percentage of sales go to charity. In previous years the sale of these biscuits have raised nearly £40,000 for the Royal British Legion’s vital welfare services.

How easy are they to make?

1 cup dessicated coconut
1 cup flour
1/2 cup butter
1 level teaspoon baking soda
2 cups rolled oats
1 cup sugar
2 tablespoons golden syrup
2 tablespoons boiling water

Mix dry ingredients, melt butter & syrup together in small saucepan. Dissolve soda in boiling water, add to dry ingredients. Cook until golden brown on 180c.



Today is ANZAC day in Australia and New Zealand, a day to honour and remember the many lost during the Gallipoli campaign on 25 April 1915. The day was inaugurated on 25th April 1916 to commemorate the first anniversary of the landing of troops. The acronym ANZAC was coined in 1915 when the troops were training in Egypt and the word ANZAC was eventually applied to all Australian and New Zealand soldiers.

Emmm..Louise they looks very tastey! I am supposed to be cutting back a wee bit on the carbs but find I cannot resist dunking a biscuit in my afternoon tea....no will power!

I've never had Anzac biscuits, don't think I've ever seen them for sale but I will be keeping an eye out for them because dunking biccies is one of my all time fav things!

The ANZAC cookies look delicious, Louise. I love to dunk a oookie in my morning coffee, especially a hard Italian biscotti.

Hi Louise. I must admit I feel curious about those biscuits, BUT much more interested in your cake recipe from the earlier post. I am thinking that you are like me: I mean, you love to bake, but are "forced" to eat the precious creations!! I try not to bake because of that; even though I have a brand new Kitchen Aid mixer...

Anzac day isn't complete without the biscuits. We stood at the war memorial and paid our respects and then off for a well earned cup of tea and some... Anzac biscuits.

I have never had an ANZAC biscuit but I would like to try it. I love cookies to dunk in tea and coffee.(I'm bad too, I know) I loved the interesting history you added to your post.
